Low Sodium One Pot Beef Stroganoff

I have been on a quest to re-create as many recipes as possible, to make them low sodium, as we recently learned my better half needs to limit his salt intake. One of our favorite comfort food dishes is Beef Stroganoff.
But as you know, most recipes either contain a "cream of" soup, call for lots of seasonings including salt and use regular beef stock...all which are very high in sodium. This popular Russian dish usually contains 1,000mg+ sodium per serving. YIKES!
I found a recipe that had great reviews over at Damn Delicious. As I surveyed my pantry, it looked like I had pretty much everything I needed to re-create and reduce the sodium in this dish.
Now, I didn't add this ingredient into the recipe, but you can use Mrs. Dash seasonings when you are cooking the beef, to give it some extra flavor. I love this set below. You get 12 different Mrs. Dash seasonings and it comes out to less than $4 a bottle.
As always, you can adjust the ingredients to your liking. I also think sliced carrots might be a good addition to this dish, giving it a little more flavor. If you're not on a sodium restricted diet, just use regular beef stock and I'd say probably about 1/4 tsp of Salt. Hope you enjoy and as always, let me know your thoughts!
