My Mom has always been an avid gardener, in fact, after moving to South Carolina, she became a "Master Gardner". Yes, that's apparently a real thing. Like, you have to go to class and you graduate and it's a big deal. She's awesome at it. I on the other hand did not inherit any of her green thumb abilities. I've killed a cactus before and I'm pretty sure they don't require much maintenance. So when she asked me if she could use our yard to build a herb garden, I didn't even hesitate. The answer was "Absolutely!"

So the south side of our yard is now home to an abundance of luscious, green herbs and vegetables. The tenant taking up the most space right now is Kale...and I couldn't be happier!

I've been craving a good kale and egg bake, so this morning was the day our Kale would receive their first "haircut". This recipe is for one serving, so I only needed 2 stalks, but I grabbed a few more so I could make some salt and vinegar Kale chips in the air fryer. You can certainly double, triple or even quadruple this recipe for a larger crowd. But this morning, it was just a table for one and I enjoyed every bit of it! Hope you do too!
