Easy & Creamy Broccoli Salad

I love a good broccoli salad but I have one problem with most recipes I've tried...They give me indigestion. I don't know if it's due to the red onion or the mayonnaise or what. So I switched up a few recipes and the ingredient amounts by using less mayonnaise and using a sweet onion.

This recipe is always a hit at events and family gatherings, even amongst the veggie haters. You'll notice in the recipe ingredients and directions, that I mention you might want to double the dressing if you like a very creamy, thick sauce. Totally a preference thing. I've tried it both ways and it's delicious with the regular amount as well as the doubled amount. Also, if you want to mix things up a bit, you can cut the amount of broccoli called for in half and use cauliflower in it's place. That's a good mixture too!

My final piece of advice for the recipe is if you do not plan on consuming the full batch of broccoli salad in one sitting, I would recommend you buy the pre-shredded cheese. I know, I know, it has cellulose to keep it from getting mushy, but I haven't found any legit evidence that it's actually bad for you. But if you want to shred your own cheese and feel the entire batch will be consumed at once, then you can do so, just know if you have it for leftovers, the cheese may be a bit slimy. My go-to grater for thick shreds of cheese is the ValueTools Manual Rotary Grater, which I also used to grate my carrots.
