Brussels & Brown Butter Risotto - Plant Based
Who knew Brussels Sprouts could be so delicious? Home Chef and a few recipe alterations made this happen!
We have been loving our vegetarian subscription to Home Chef! So far there hasn't been a meal we didn't approve of! However, we have decided to go plant-based, so we needed to alter the Home Chef recipes that were delivered this week just a bit.
Tonight's recipe was Brussels & Brown Butter Risotto. I needed to substitute the Goat Cheese, Parmesan and Butter. I was crossing my fingers the entire time that this would work...and it did.
I replaced the Butter with CountryCrock's Plant Butter, I replaced the Parmesan with Nutritional Yeast and I omitted the Goat Cheese. Believe it or not, it turned out amazing!
