Black Bean Enchiladas
World Vegetarian Day, October 1st, initiates the month of October as Vegetarian Awareness Month and so we're extremely excited to feature plenty of Vegetarian recipes with you!
The first in this series is the Black Bean Enchiladas with Poblano Peppers recipe, which we received in our last Home Chef subscription box. Out of all the recipes we have received through our recipe subscription boxes, this has been by far the easiest!
Our recipe box was for 2 people but you can easily get at least 3-4 servings serving if you use the full can of beans and add a few more tortillas...plus extra cheese. We also add extra cheese!
